As Grant Achatz prepares to bring his celebrated Chicago restaurant Alinea to Bellagio for a limited-time residency, a second concept from The Alinea Group is now joining the lineup. The Aviary, the group’s acclaimed cocktail lounge, will take over The Vault for a monthlong engagement in May.
The addition builds on the previously announced Alinea pop-up at Michael Mina, detailed in our earlier coverage.

Running May 1 through May 31 (Wednesday through Sunday), The Aviary will offer its signature cocktail experience in The Vault, pairing three of its most inventive drinks with curated bites of food. Known for theatrical presentations and boundary-pushing techniques, The Aviary brings the same spirit of experimentation that helped define Alinea’s global reputation.
Reservations are now available for the prepaid experience, priced at $175 per person for parties of two to four. A limited à la carte menu of classic Aviary cocktails will also be offered for walk-in guests, alongside The Vault’s regular offerings.

The setting itself adds another layer to the experience. As we’ve seen in previous pop-ups at The Vault, the intimate, high-end lounge is designed to feel exclusive, making it a natural fit for The Aviary’s immersive style.
Together, the dual residency offers a rare opportunity to explore Achatz’s approach to food and drink at multiple levels—whether through Alinea’s full tasting menu or a more focused introduction via The Aviary’s cocktail-driven experience.
