Jing Las Vegas has spent seven years proving that a restaurant can deliver a nightclub atmosphere in a suburban setting without treating the food as an afterthought. Now the Downtown Summerlin restaurant is applying that formula to weekend brunch, with DJs every Saturday and Sunday, an à la carte brunch menu by corporate executive chef Thomas Griese, and theme parties once a month.

On the Strip, restaurants that pair a high-energy club-like environment with serious cuisine are often grouped under the label “vibe dining.” But the phrase doesn’t fully capture what Jing has brought to Summerlin South: a menu of sushi, steaks and wok dishes, plus a modern dining room that gradually shifts from restaurant to late-night lounge.
Griese described the typical daily progression on the Food and Loathing podcast: happy hour from 3 p.m. to 6 p.m., dinner through the evening, then a livelier atmosphere after 9 p.m. The new brunch starts a little earlier on weekends, running from noon to 3 p.m. on Saturdays and Sundays. But it follows the same principle: music, menu and polished, attentive service combine to create the full experience.
Jing’s brunch menu offers nods to familiar breakfast ideas without abandoning the kitchen’s broader approach. Ube buttermilk pancakes come with halaya crème, coconut and whipped vanilla butter. A breakfast steak burger adds bacon, cheddar and a sunny-side-up egg, with garlic fries on the side. Shrimp and grits combine tiger prawns, rock shrimp and andouille sausage in a trinity sauce.
Other options include whipped burrata toast with chili crunch, peperonata and stone fruit, along with a pumpkin-spiced croissant doughnut. Guests can also order from Jing’s sushi and raw-bar selections and other established favorites.

The regular weekend brunches will have DJs, but Griese says they aren’t trying to be a dayclub or anything close. Once a month, however, the restaurant turns up the volume a bit at a themed Party Brunch. (The October 25 Halloween edition offered a costume contest with a $1,000 cash prize.) So diners looking for a lively Saturday or Sunday meal aren’t signing up for an all-out party. But those seeking the bigger productions have a monthly opportunity to indulge.
Brunch is served Saturdays and Sundays from noon to 3 p.m. at Jing Las Vegas, 10975 Oval Park Drive in Downtown Summerlin. Reservations are recommended through jingrestaurant.com or by calling 702-333-1512.
