Pick of the Week: Edge Steakhouse

Edge Steakhouse at Westgate Las Vegas is a mix of Elvis tributes, classy and refined décor, fine dining, dry-aged steaks, caviar service, premium libations, and imaginative appetizers.

An elegant ambiance is achieved through hardwood floors, gold and ivory pillars, crystal chandeliers, a dark brown and tan color scheme, and contemporary artwork and photos of Elvis adorning the walls. There are also two private dining rooms, each accommodating approximately a dozen guests. The Elvis Room is complete with Elvis memorabilia and some of his personal guns and other possessions, a nod to the property’s history of performances by The King and ongoing Elvis tribute concerts; and the Wine Room features a wall of wine, appropriate as the restaurant is a 2025 winner of a Wine Spectator Restaurant Award due to its expansive wine list.

Executive Chef Dante Garcia, who has held the position for a year and a half, was appointed after excelling at respected fine dining establishments on the Vegas Strip. Before coming to Edge, he spent time at The Bedford by Martha Stewart at Caesars Palace, Jack Binion’s Steak at Bally’s (now Horseshoe), and Gordon Ramsay Steak at Paris. Commenting on why he selected the talented chef, Westgate Hotel Executive Chef Steve Young said, “He has a great attention to detail and makes things as great as possible.”

Chef Dante brings several appetizers, delivering the wow factor. Highlights include Tomato and Mozzarella Salad with tomato terrine, ciliegine mozzarella, balsamic reduction, port wine-roasted grapes, and basil seeds (which mimics caviar); Spicy Shrimp lightly fried with spicy emulsion and sweet chile reduction; and Yellowtail Crudo—a mélange of colors with avocado, radish, cucumber, lime, and jalapeño lime vinaigrette that is so beautiful it made the cover of the RJ Magazine Top 100 Restaurants in Las Vegas Summer 2025 issue.

You wouldn’t be blamed if you stopped there after so many impressive starters, but you shouldn’t miss out on the Prime meats aged in-house. They’re on display for all to see, visible through a window located just outside of the restaurant’s entrance, with each cut labeled with the date its aging process began. A 40-day dry-aging makes the meat super tender and concentrates its rich flavors, giving it a unique taste.

Examples are the 20 oz bone-in NY Strip and 20 oz bone-in Ribeye. There’s also some excellent elite cuts, including Australian Westholme Farm 10 oz Wagyu Skirt Steak, Australian Stone Axe Farm 12 oz Wagyu Strip Loin, and Snake River Farms 7 oz Wagyu Rib Cap. Not that you’ll need them, but you can pair your steak with peppercorn, bearnaise, chimichurri, creamy horseradish, and red wine reduction sauces.

In addition to the superior beef, non-meat eaters can find something to their liking with citrus-brined Mary’s Organic Chicken, Alaskan Red King Crab Legs with lemon beurre monte, Black Cod with tomato dashi and pickled eggplant, and Ora King Salmon with yellow bell pepper puree and lemongrass emulsion.

The aforementioned expansive wine list features wines from all over the world, comprising an inventory of 3,500 bottles and 480 selections. Whiskey fans will be happy with a choice of dozens of fine pours of the usual favorites, as well as some lesser-known gems like Penelope Private Select and Widow Jane 10-Year, and some original cocktails like the Golden Harvest Pear with Buffalo Trace Bourbon, St. George Spiced Pear Liqueur, and Madagascar vanilla.

Great choices for your meal’s finale are the Tahitian Vanilla Crème Brûlée, which arrives flaming and accompanied by fresh berries and shortbread cookies; and the Chocolate Dome, melted at your table to reveal a warm s’mores brownie with pecan praline and vanilla chantilly, served with caramel ice cream.

Edge Steakhouse is open Tuesday through Saturday from 5 to 10 p.m. To view the complete menu, click here.
