Keep Calm and Kerry On at Carson Kitchen
Described as reimagined comfort food prepared with approachable fine-dining ingredients, Carson Kitchen opened in 2014 as a partnership between chef and restaurateur Cory Harwell and his dear friend, the late Chef Kerry Simon.

Located in the converted John E. Carson Hotel at Carson and 6th, just a block north of Fremont Street, this eatery is bringing a classy vibe with fine-dining flair in a casual atmosphere at approachable prices. The decor features a contemporary bar, an open kitchen with an expo counter, a wood slat ceiling, a rooftop bar, and an outdoor patio with artificial turf and heating via a fire pit and heat lamps.

Executive Chef Lina Chavira helms the kitchen. A graduate of the Art Institute of Las Vegas (Culinary Arts), she met Cory Harwell at Nine Fine Irishmen in the NY NY Hotel/Casino when he was the F&B Director, and she was a Line Cook who was eventually promoted to Master Cook. Years later she heard that Cory had opened Carson Kitchen, reached out to him, and was hired in 2016 as the Executive Sous Chef. Chef Lina held that position for nine years, primarily working under Executive Chef Scott Simon (Kerry Simon’s brother), and was recently promoted to the Carson Kitchen Executive Chef role when Scott took the Executive Chef position at Cory Harwell’s newly opened Butcher & Thief.

A long table fronting the open kitchen is a nod to Kerry Simon, as he had one like it in his home to entertain guests. Sitting in one of the six seats provides a bird ’s-eye view of the chefs in action. The table is also home to the Swear Jar, which you can add cash to, because, as General Manager Brendon Young explains, “The food is so good, it’ll make you swear.” Actually, once the glass container is full, Brendon breaks it open, and the spoils are divided among the line cooks and dishwashers.
More nods to Kerry include a wall displaying the phrase “Keep Calm and Kerry On,” and a window featuring a black-and-white image of the Rock N Roll chef. There are also eight original menu items designed by Kerry, such as the iconic sweet and salty Bacon Jam with Havarti and toasted baguette, Crispy Fried Chicken Skins served with smoked honey, Killer Shrimp with a rocoto and aji Amarillo pepper cream, and Glazed Doughnut Bread Pudding with three rum caramel and vanilla crème anglaise.

The Social Plates section of the menu is so named as the dishes are meant for sharing, like the Tempura Green Beans with pepper jelly cream cheese and “Devil’s” Eggs with crispy pancetta and caviar. The Secret Sunday Chicken, served with spicy pickle aioli, is Corey Harwell’s version of a Chick-Fil-A sandwich, which he was a fan of growing up in the South, so named because, unlike the chain favorite, you can get it here on a Sunday. Some truly unique offerings include the Cocoa-Espresso-Crusted NY Strip with red wine demi; Brussels Sprouts Caesar Salad, made with shredded Brussels sprouts, Parmesan, lardons, and bacon-fat croutons; and Bourbon Fudge Brownie with brown-butter bacon ice cream.

An eclectic drink menu includes signature creative cocktails like the popular Daddy Wags with Blanco Tequila, grapefruit, lime, cayenne, and simple syrup; and The Magarian with American gin, thyme & honey syrup, lemon, and cucumber soda.
Some outstanding deals can be enjoyed during the weekday happy hour. Available exclusively in the bar area Monday-Friday from 3 to 5 p.m., they include Grilled Oysters ($3 each), “Devil’s” Eggs ($3 each), Gyro Tacos ($5), Tempura Green Beans ($6), select beers ($5), select wines by the glass ($8), and well drinks ($6).
Carson Kitchen is open Sunday through Thursday from 11:30 a.m. to 10 p.m. and Friday to Saturday from 11:30 a.m. to 11 p.m. To view the complete menu, visit carsonkitchen.com.

Recently, on the Food and Loathing Podcast
Be sure to check out Food and Loathing this week (and every week). The podcast features veteran food writer Al Mancini, along with co-host Samantha Gemini Stevens and producer Rich Johnson, as they give the lowdown on what’s new, hot, and delicious in America’s most glamorous city, as they talk with chefs, bartenders, journalists, and other experts on where to go and what to order when you get there.

This week, Al devotes the center of the episode to a preview of Vegas Unstripped, the annual celebration of local chefs displaying new cutting-edge items. The two big rules of Unstripped: head chefs must represent their restaurants, and the items they serve may not be on the menu at their places. Another similar-yet-different event is also on the horizon: Taste of Stations. It’s Stations Casinos’ event highlighting the chain’s galaxy of restaurants. Also: Gemini pops up with a preview of Chefs for Kids, the charity that helps kids experience the hospitality industry. Al also gets the lowdown on a new BBQ competition downtown and the big charity event tied to International Pizza Week. And let’s not forget a Happy Hour Report from Happy Hour Vegas’ Andrew Morgan and some beer news from this week’s co-host, Bob Barnes.
