Pick of the Week

Two Los Angeles Quick‑Serve Favorites Open at The Resort at Summerlin

Los Angeles has made its way to the Neighborhood Food Hall in The Resort at Summerlin. Not the city itself, but two of its most popular quick-serve restaurants: Tacos 1986 and For The Win, both of which were born on the streets of L.A.

Tacos 1986 debuted as a taco cart at Lexington and Hollywood in Downtown L.A. in 2018 and opened five locations in its first year. This Las Vegas outpost marks its 9th location and first in Nevada. Partners Victor Manuel Delgado III and Jorge “Joy” Humberto Alvarez have become known for their Tijuana-style tacos. When asked by Al Mancini on the Food and Loathing Podcast about the concept, Chef Joy said, “This concept started because my partner Victor, who is from Tijuana like myself, decided there was a gap in Los Angeles of Tijuana-style tacos that we grew up eating in the same neighborhood of Tijuana. The taco starts with a handmade yellow corn tortilla, grilled meats cooked over a grill or vertical spit. The Resort at Summerlin offered us an opportunity we couldn’t refuse and felt we could make an impact here [in] the community where the locals are.”

Like other big hit quick-serve restaurants, the menu is simple and streamlined, offering tacos, quesadillas, and burritos. All come Con Todo—with onion, cilantro, fresh guacamole, and mild tomato-based salsa. The street Tacos are $4.25, Quesadillas (pretty much a street taco with cheese) are $4.95, and Burritos are $13.25. You can save a bit by opting for one of the three combos, which come with red rice and beans, a choice of protein (Carne Asada, Pollo Asado, Adobada Pork, and vegan Hongo Mushroom), and a fountain drink. The combos include Taco (with two tacos for $14), Quesadilla (two quesadillas cooked on a plancha with crusted cheese for $15), and Burrito (pinto beans, flour tortilla, and cheese for $17). You can jazz up your selections by visiting a stand with limes and assorted salsas.

For The Win, a Southern California staple since 2020, is the creation of Chef/Restaurateur Santos Uy. The concept was born out of necessity, when Chef Uy’s French bistro Papilles (which won a MICHELIN Bib Gourmand award) on the corner of Franklin and Argyle in Hollywood was forced to close during the pandemic. He had already been working on a burger lunch concept, so pivoted to open the quick serve restaurant. As the acclaimed chef had already garnered a large following, it was an instant hit and now has 10 locations.

Al asked about how the project took off, and Chef Uy said, “We already had a following from the French bistro, and sales started to eclipse Papilles ‘ sales once we were allowed to dine in again. It’s easier, with fewer moving parts, so we decided to switch completely to the burger restaurant.”

The menu here is also streamlined and specialized, with the signature menu item being the smash burgers ($9 single, $12 double, and $15 triple) with high-quality patty from grass-fed beef smashed thin with grilled onions, pickles, and the restaurant’s signature fry sauce served on a toasted Martin’s potato bun. The burgers can be spiced up with jalapenos and bacon. Chef Uy explained that it took him nine months to create and perfect the special sauce, using the same approach he used at his French restaurant, considering it a liquid food with complexity and nuance, and adjusting the acidity, sweetness, and heat. It’s also a star ingredient in the Loaded Fries, topped with grilled onions and two slices of melted American cheese. A holdover from the bistro is Balsamic Brussels Sprouts, deep-fried in beef tallow and finished with balsamic vinegar and lemon juice, which had previously been a side at Papilles and is an unexpected happy surprise to find on a quick-serve restaurant’s menu. In addition to the smash burgers, For The Win also offers a Veggie Burger and a fried Chicken Sandwich.

As for the origins of the two eateries’ names, Tacos 1986 commemorates the year Chef Victor was born, and For The Win is a sports reference, referring to the moment when one realizes they’ve just had the best burger ever. The eateries are situated side by side within the Neighborhood Food Hall. Both stay true to their roots with a counter-service layout, share a draft line with several craft beers, and are open Sunday through Thursday from 11 a.m. to 9 p.m., and Friday and Saturday from 11 a.m. to 10 p.m.

Rebellion Pizza Expanding with Rebellion Market

Rebellion Pizza Owners Ryan Perras and Ricky Lewis  CREDIT: David Canela

Nearly five years ago, Co-Owners Ricky Lewis and Ryan Perras opened the artisanal Rebellion Pizza in the Anthem Village Center in Henderson. Their first venture was so successful that last year they branched out, opening a Rebellion Pizza in Centennial. Now they are expanding again, with the upcoming opening of Rebellion Market.

Situated next to Rebellion Pizza, the market will sell a range of products, including deli meats and cheeses, pizza and bread dough, made-to-order sandwiches, and bread made from the same dough used for their signature pizza. Ricky said, “It’ll have a market vibe and will be a specialty market unlike anything else in the area. The bread is healthier and more digestible because the flour we use has no bleach, no bromine, and no seed oils, and the dough is made from a starter with a 72-hour cold fermentation, so it has very little sugar.”

The market will offer six or more unique sandwiches and a cheesesteak program featuring high-quality shaved ribeye on a fresh roll. All the ingredients in the sandwiches will be available for sale by the pound. An opening in the wall will connect the market to the pizzeria, so guests can make their market purchases and walk through to grab a seat and enjoy one of more than 50 locally brewed beers, which happens to be the largest local beer selection in Southern Nevada.

The opening of Rebellion Market is planned for mid-May, which will line up with Rebellion Pizza’s five-year anniversary.

Guests will also enjoy Jaleo’s signature sangría and a traditional clara porrón.

The paella-making class will begin at 4 p.m., and the cost is $120 per person (plus tax and tip). Classes will host up to 20 guests and take place on the last Saturday of each month, with rotating themes and seasonal variations. To purchase tickets, click here.
