Eataly Las Vegas is going all-in on one of Rome’s most iconic pasta dishes.
Through June 24, the Italian marketplace within Park MGM is spotlighting carbonara at its La Pizza & La Pasta restaurant, with a limited-time menu built around the classic — and a few creative variations.
At its core, carbonara is a simple dish: pasta, eggs, Pecorino Romano, black pepper, and guanciale—the cured pork cheek that defines its signature flavor. Many American restaurants cut corners on that last one, substituting more common cuts like pancetta or even bacon.
But not at Eataly.
“It’s part of the tradition to maintain the dish as authentic as possible,” said Luca Esposito, director of store operations, on the Food and Loathing podcast.



Alongside the traditional version, Eataly is taking a looser approach with three additional interpretations. A truffle-topped carbonara adds richness, while a spring-focused asparagus version leans into the season. There’s also a shrimp variation that brings a lighter, coastal twist to the Roman staple.
The menu extends beyond pasta, with Roman-inspired dishes like fried artichokes, pizza romana, and supplì rounding out the experience. But the star here is clearly carbonara — done the classic way, or reimagined for a limited run.
