Pick of the Week: Able Baker Bomb Shelter

CREDIT: David Canela

Beer fans of Able Baker living in the northwest now have a much shorter drive to enjoy the popular brewery’s beers, including its iconic flagship beer Atomic Duck IPA. At long last, its Bomb Shelter taproom and restaurant is now open in the Centennial area.

Located at 6371 Centennial Center Blvd, the name and branding fit the theme of the brewery named for the code names of the first two blasts at the Nevada Test Site, “Able” and “Baker.” At the entrance is a holdover from the previous Montana Meat Company space that, fortuitously, is shaped like a nuclear silo. The new digs at 6,000 square feet are larger than the taproom and brewery facility (at 1510 S Main) combined, and while it’s licensed for brewing, there are no current plans to brew onsite. What’s different from the Arts District location is an abundance of free parking and three spacious, family-friendly patios with artificial turf and games, including ping-pong, cornhole, and connect four. Inside, there is a bright and cheerful ambiance thanks to ample windows, a separate bar area, a kid-friendly dining room, rustic red brick walls, several TVs, and artwork and artifacts on loan from the Atomic Museum, displayed throughout.

If one had to hunker down in an actual bomb shelter, the food here would make it not just bearable, but quite enticing. The kitchen is under the direction of Executive Chef Zeb Nuzzo-Todd, who worked with Chef Gio Mauro at Old School Pizzeria and opened Monzu (where he was exposed to culinary techniques), worked with Richard Camarotta at both locations of Wineaux, and was a pastry chef at Fontainebleau. Along the way, he obtained a sourdough yeast that he has been cultivating for 10 years, which he uses in a three-day fermentation for the pizza dough and in the bread for the sandwiches on the menu. The menu is created by both Chef Zeb and Assistant Executive Chef Carlos Ruiz, whom Chef Zeb refers to as “the butter to my bread.” Chef Carlos also worked at Old School for 10 years, so he has plenty of pizza-making experience. In describing the food menu, Chef Zeb says, “We’re making honest elevated comfort food that everyone can relate to.”

Chef Zeb also shared that they have an 85% scratch kitchen. The attention to freshness and quality ingredients shows: The Nalo Poke uses a sashimi-grade ahi, sauces and breads are made in-house, and the Wings are beer-brined and tossed in a choice of buffalo, lemon pepper parmesan, or gochujang honey.

The Bomb Pies refer to a range of pizzas, with creations including Tartufo with truffle ricotta, mushroom medley, fried arugula, and aged balsamic; Lemon Basil with basil cream, smoked mozzarella, ricotta, and lemon olive oil; and The Garden with artichoke, spinach, roasted bell peppers, and roasted garlic. There are also traditional pies, and you can build your own by selecting the type of crust, sauce, cheese, and toppings.

A unique offering is the Pork Belly Dip with a side of au jus, which takes the French Dip to a new level with nuances like smoked mozzarella, sweet onion, and Fresno chilies. The Bomb Shelter Burger with two beef patties, New School American cheese, and caramelized onion is as good a burger as I’ve had in a while. All of the desserts are house-made, and the section of the menu is cleverly called Sugar Rations; a standout is the Brioche Cinnamon Roll with purple colored ube gelato and cream cheese frosting.

As for the beer, the 26 taps pour mainly Able Baker brews with a handful devoted to other local and regional beers. Another reason to come here is the four beers exclusive to this location, such as the New to the Neighborhood Imperial Stout and Bunker Barleywine (two beer styles dear to my taste buds!). The Bomb Shelter offers a full range of wine and spirits, with classic cocktails such as Moscow Mules and Old Fashioneds and a few mixed with beer like the Nitro Stout Cold Brew Martini with stout, espresso, house-infused vanilla vodka, Licor 43, and Borghetti espresso liqueur.

Happy hour Monday-Thursday from 3 p.m. to 6 p.m. has a handful of Able Baker beers for $6, $7 glasses of house Cabernet or Chardonnay, $9 margaritas or Palomas, and 20% off many appetizers.

Another way to save is the $15 lunch special. Available Monday-Friday from 11 a.m. to 3 p.m., there are 10 options, including Portobello Tacos, the aforementioned Bomb Shelter Burger, Chicken Caesar Wrap, Strawberry Fields Salad, and Half Pie (cheese or pepperoni).

Bomb Shelter is open Sunday-Thursday 11 a.m. to 11 p.m. and Friday-Saturday 11 a.m. to midnight. To view the complete food menu and beer tap list, visit ablebakerbrewing.com/bombshelter
