Durango Social Club Welcomes Guest Chefs — Starting With a Smashburger Pop-Up

Chef Dan Krohmer, the chef behind the beloved seafood spot Other Mama, quietly shifted course this summer with his newest project, Durango Social Club. What began as his own tightly focused tasting menu concept — served weekends only — is now evolving into a rotating showcase for visiting chefs, collaborations, and one-off culinary events, just across the street from Desert Breeze Park.

Dan Krohmer and Steve Lee

Krohmer says this was always the idea. The initial run, he explains, was simply his version of the pop-up.

“The whole point of this place wasn’t about being the Dan show,” he says. “I wanted this to be a [place for] rotating events, pop ups and just being like a chef clubhouse. So just variety and fun things happening for the community.”

The first major guest residency arrives next week, when Chef Steven Lee brings his smashburger concept In Limbo out of the ghost-kitchen wilderness into a proper dining room. Previously available only through takeout in Summerlin, Lee says the partnership gives In Limbo, a chance to be seen — literally.

“I feel like I had the best burger in Vegas nobody knew about,” Lee says. “I was pretty much invisible there. So this is my way of trying to get people to taste my burger.”

Lee’s pop-up runs November 10–14, serving lunch from 11 a.m.–2 p.m. and dinner from 5–9 p.m. Expect two smashburgers — a jalapeño-bacon-onion-jam version and a pickle-and-grilled-onion option — priced at $8–$9, plus fries and drinks. Durango Social Club will also be offering a full bar.

The casual burger takeover is just one piece of Krohmer’s developing calendar. Beginning later this month, Chef Tyler Vorce, who cooked at The French Laundry and helped launch the truffle-focused brand Truffle Shuffle, will host weekend tasting menus through the end of the year. Krohmer describes those dinners as reservation-only and more refined, offering a counterbalance to the pop-up snacks, late-night burgers, and chef-driven small plates that will rotate throughout the week.

“I just like this to be a great incubator for people… who have been trying to wing it through ghost kitchens,” Krohmer says. “I don’t want this to be about me. I want this to be about the community and showing diversity.”

The energy is intentionally neighborhood-friendly — adventurous dining without the need to trek to the Strip or downtown. Krohmer says he hopes the residents of Spring Valley and Summerlin South will treat it as a hangout, whether for a ticketed dinner, a quick cocktail, or a spontaneous late-night snack.

Both interviews will be featured on this Friday’s episode of the Food and Loathing podcast.
