Pick of the Week: Flour & Barley
Most people know that the LINQ Promenade leads to the High Roller observation wheel, but what is often overlooked are the numerous restaurant options, including one that offers the perfect combination of pizza and beer—Flour & Barley, a restaurant operated by the Gen3 Hospitality group.
The décor presents a bright and cheerful ambiance, featuring a variety of colors that complement rustic red brick and a distressed wood floor, as well as red and brown banquettes, white tile in the open kitchen, orange-hued chairs, and large windows that bring in natural light.

Flour & Barley is an ideal name for a restaurant specializing in pizza and beer. On the beer side, this eatery supports our local breweries to the extent of offering no fewer than 10 local beers. The draft line-up includes Big Dog’s Dirty Dog IPA and a rotating local handle (currently Lovelady Summer Slice, a Mexican Lager with Hatch chilis). The canned selection has Able Baker Atomic Duck, Big Dog’s Las Vegas Craft Lager, CraftHaus Rebel Spirit Ale, HUDL Cockfight Pilsner, Lovelady Love Juice IPA, Neon Desert Early Out IPA, Revision Elusive Rainbow Tree ‘Shroom IPA, and Sin City Amber.
More nods to local are the Granny’s Peach Tea cocktail made with Mob Museum Moonshine, peach syrup, peach schnapps, fresh brewed tea, and lemon juice; and the Come Fly with Me whiskey flight from Nevada distilleries with Bettor Las Vegas Whiskey, Frey Ranch Bourbon, and Smoke Wagon Bourbon. The love for supporting local is not surprising, as Gen3 Hospitality founder Billy Richardson is a third-generation Las Vegan.
More than a dozen unique brick oven pizzas are offered, including two named for Richardson’s daughters: the Bianca ($24) with garlic cream sauce, pecorino Romano and mozzarella, sundried tomatoes, roasted mushrooms, truffle cheese, arugula, and truffle balsamic glaze; and the Gianna ($20) with red sauce, Italian sausage, mushroom, pine nuts, and mozzarella and pecorino romano.

Standout options for non-carnivores include the Verdure ($19) with red sauce, zucchini, eggplant, artichoke, mushrooms, spinach, and pecorino Romano and mozzarella, and the Vegan ($23) with red sauce, vegan cheese, roasted tomatoes, vegan sausage, and roasted mushrooms.
If you think this place only serves pizza, think again. Consider Tomato Caprese ($15) with vine ripe tomato, fresh mozzarella, basil, salsa verde & balsamic glaze; Yellowfin Tuna Tataki ($19) with lightly seared tuna, briny green olives, pickled shallots, garlic chips, and balsamic yuzu; Brussels Sprouts ($14) loaded with smoked bacon, potatoes, maple-spiced honey & sunny side up egg; Cauliflower Steak ($22)—pan roasted cauliflower, chickpea puree, and chimichurri; and Lobster Pea Risotto ($28) made with green pea puree, chicken broth, butter, lobster meat, and fresh pea garnished with Parmigiano crisps.
Portion sizes are generous, and prices are reasonable, especially considering the ultra-high-rent district of the Vegas Strip. Additionally, the extensive local beer selection qualifies this eatery as a one-stop shop for local beers.
