Events

Grid Iron Grill — February 28

Red Rock Casino Resort & Spa will welcome the iconic L.A. specialty foods destination, The Cheese Store of Beverly Hills, for a one-day-only pop-up held inside the Grid Iron Grill.

The shop, founded in 1967, known for its gourmet, rare, and seasonal cheeses, fine wine, specialty imports, and delicacies, will bring its celebrated cheeses alongside freshly prepared offerings. Offerings will include signature sandwiches such as Le Rôti with roasted Double R Ranch ribeye with melted gruyère and havarti; Chicken Caesar Salad with grilled Jidori chicken; mini cheese boards featuring gouda, brie, and goat cheddar; house-made sweets like warm chocolate chip cookies and dolce ricotta; and specialty sides including Zippy Dill & Vinegar Potato Chips.

The pop-up will be open from noon to 5 p.m.

Washing Potato — February 28

Fontainebleau Las Vegas is continuing its immersive and interactive Signature Series culinary classes.

The 2026 series will kick off with the return of the popular Discover Dim Sum class, which will be led by MICHELIN-starred Chef Richard Chen and his team at Washing Potato. Chef Chen will take guests on a deep dive into dim sum in this comprehensive class, as participants will taste and make signature Washing Potato specialties, such as Shumai and Har Gow, while learning techniques for creating shareable bites. The class begins with a welcome cocktail before the hands-on demonstration and concludes with a three-course sit-down lunch and cocktail pairing.

The class will run from 1 to 4 p.m. at Washing Potato, and the cost is $175 per person (plus tax and tip). To purchase tickets, click here.

The Vault — March 6-7 

The Bellagio is continuing its Liquid Legends yearlong guest series at The Vault, honoring the bartenders, writers, and historians who helped define modern cocktail culture.

Next up is Robert Simonson, author of A Proper Drink, The Old-Fashioned, and The Martini Cocktail. Simonson has spent two decades documenting the bars, bartenders, and drinks that shaped how we drink today, and, for this collaboration, will bring a menu built around true modern classics and the stories behind them. His menu will honor original recipes and will include Audrey Saunders’ French Pearl from Pegu Club, Erick Castro’s Piña Verde from Polite Provisions, Meaghan Dorman’s Wildest Redhead from Dear Irving, Vincenzo Errico’s Enzoni, Nicole Lebedevitch’s Ce Soir from the NoMad era, and Douglas Ankrah’s Porn Star Martini from London’s Townhouse.

Brezza/Gatsby’s Cocktail Lounge — March 12

In celebration of Women’s History Month, Brezza and Gatsby’s Cocktail Lounge at Resorts World will collaborate for a dinner and after-party with two culinary talents: Hell’s Kitchen Season 24 Winner, James Beard semifinalist, and Executive Chef of Main St. Provisions, Ellie Parker; and James Beard semifinalist and Partner and Executive Chef of Brezza and Bar Zazu, Nicole Brisson.

The dinner, appropriately titled “Girls With Game,” will begin at Brezza at 6:30 p.m. with a multi-course menu featuring wild game paired with Antinori Wines. On the menu are appetizers of Confit Rabbit, Bresaola, Venison Tataki, and Smoked Trout; Duck Polpettini with glazed cippolini, currants, and preserved orange; Heritage Goat with farro, Castelvetrano, coriander, and mint; Bison Raviolo with cremini mushroom, smoked pine nut, and Calabrian chili; Mostardo Glazed Quail with Roveja peas, fennel, and celery heart; Braised Lamb Shank with truffle, polenta, and pecorino; and Semolina Budino with seasonal fruit and nonino cream.  

Following the dinner, Gatsby’s will open its lounge for a special after-party featuring one complimentary cocktail for all dinner guests beginning at 9:30 p.m. with a live DJ from 10 p.m. until late.

Restaurant Opening

Charter 75 Modern Kitchen

Charter 75 Modern Kitchen is now open at the Gold Coast Hotel & Casino.

The name refers to the year Boyd Gaming (owner of Gold Coast) was founded, and the new restaurant is set in the former TGI Fridays space. Following an extensive remodel, the new look centers on a bar surrounded by rich wood finishes, and the dining room features deep‑tone furnishings, plush seating, and contemporary décor.

Described as a gastropub, the menu features a wide range of elevated comfort dishes with appetizers like Jumbo Pretzel with coarse salt, ale house cheese fondue, and stone‑ground mustard; Bahn Mi Sliders with shaved pork, hoisin, pickled vegetables, and jalapeño; Cheesesteak Egg Rolls with shaved prime rib, provolone, and sauteed onions; and Baja Rock Shrimp with Dos Equis beer batter, chilis, chipotle crema, cilantro, and lime.

Entrées include Baby Back Ribs with BBQ sauce, house slaw, and waffle fries; Scottish Salmon grilled filet with lemon‑butter sauce, mashed potatoes, and seasonal vegetables; Steak and Fries featuring a center‑cut 12-ounce New York strip with herb butter and parmesan‑garlic fries; Ranch-Style Bison Burger with char-broiled 8-ounce bison patty, sauteed onion, bacon, BBQ sauce, and cheddar cheese; and Fish and Chips with beer‑battered cod, slaw, waffle‑cut fries, and tartar sauce. 

The restaurant offers a full bar with spirits, wine, modern classic cocktails, and 24 draft beers. Weekend entertainment in the lounge will begin on Fridays and Saturdays starting the first Friday in March.

The gastropub will eventually welcome guests for breakfast, but for now is open daily from 11 a.m. through 10 p.m. on weeknights and until 11 p.m. on weekends.

Also coming to the Gold Coast later this month are Tacos el Pastor, a local Mexican restaurant chain offering a take on Northern Mexican street food, and Steak ‘n Shake, renowned nationwide for its Steakburger and homemade milkshakes.

Las Vegas Distillery Offering Free Dinner Every Wednesday

On Wednesdays, Las Vegas Distillery is taking care of dinner. Dubbed Midweek Supper Club, show up at the tasting room in the Henderson Booze District from 3 to 8 p.m. and enjoy a complimentary family-style self-serve meal from Chef Jared. The Distillery’s spirits are incorporated into recipes and designed to be enjoyed alongside cocktails, flights, or a tour. In past weeks, the featured meals have been Pecorino Alfredo with Roasted Broccoli, Sausage Jambalaya, Dark Rum Bacon & Caramelized Onion Mac & Cheese, Cuban Black Beans & Rice, and, on Feb. 25, Char Siu–Style Pork with Rice will be served.

Famous Foods Street Eats Launches “Street Feast”

Famous Foods Street Eats, the food hall centrally located on Resorts World’s casino floor, has introduced Street Fest, an opportunity to try tastes from more than a dozen eateries in one visit.

Available options include 3 menu items for $45, 4 for $55, and 5 for $65.

Participating eateries include:

  • Blood Bros—Texas-style barbecue with Asian influences
  • Streetbird—Nashville-style hot chicken by celebrity chef Marcus Samuelsson
  • Geylang Claypot Rice—traditional Singaporean claypot rice with crispy edges
  • Kuru Kuru Pa—Japanese street food and teriyaki bowls by the Aoki brothers
  • Famous Pho—Vietnamese pho with rich, aromatic broth
  • Yaya’s Mediterranean Café—gyros, hummus, and Mediterranean classics

Taco Escobar $20 All You Can Eat Tacos

Taco Escobar at 509 Fremont in Downtown Las Vegas has a daily happy hour from 3 to 6 p.m. with all-you-can-eat tacos for $20.

There is a one-hour time limit, and you can order four tacos at a time. Taco varieties include Al Pastor (marinated pork), Pollo (grilled chicken thigh), Camarón (roasted shrimp), Carne Asada (seared steak), Mushroom Carnitas (with roasted cactus), and Quesabirria (Guajillo braised brisket with consomé).

Drink specials are half-off all tequilas, $4 beers, $5 wells, and $6 house margaritas, and $8 for two tacos and a beer.

Neon Museum Hosting STEAM Family Fest Events

The Neon Museum, the Las Vegas non-profit known for its 2.27-acre Neon Boneyard of historic Vegas neon signs, will host three STEAM Family Fest events in 2026.

At the events, families will be invited to explore science, technology, engineering, art, and math (S.T.E.A.M.) through hands-on activities, interactive demonstrations, and live performances.

Each event will offer a distinct theme. Upcoming STEAM Family Fest events include:

  • Electric City – February 28: Electric City invites families to explore the science of electricity and the forces that make Las Vegas glow, both in the past and present.
  • Light Up the World – April 4: Light Up the World takes a closer look at how the phenomena of light, both natural and man-made, illuminate and shape everyday lives.
  • Signs and Skylines – October 24: Signs and Skylines focuses on how architecture, interior design, and landscaping have shaped Las Vegas’s story.

Thanks to the support of Speedway Children’s Charities, tickets are free for library cardholders from the Clark County, North Las Vegas, and Henderson Library Districts, with up to 4 complimentary tickets available on the day of the event. Tickets are limited and available on a first-come, first-served basis with a valid library card presented at the door. Tickets are $5 for anyone without a card.
